The perfect mix of health and taste, this soup makes for a great midnight snack.

INGREDIENTS

2 cups beetroot cubes

2 cups carrot cubes

2 cups tomato cubes

2 tbsp tamarind pulp

1 tsp red chilli powder

1½ tsp mustard seeds

1½ tsp cumin seeds

2 dry red chillies

4 mashed garlic cloves

½ tsp asafoetida

1 tsp coriander powder 1 tsp cumin powder

2 tsp rasam powder

2 tsp ghee

Salt

PREPARATION

  1. Heat the ghee in a heavy-bottom vessel. Add seasoning (mustard seeds, cumin seeds, red chillies and garlic gloves) and let it splut-ter. Blend the beetroot, carrot,tomato and green chillies, and add this to the seasoning with 10 cups of water. Add chilli powder,coriander powder, cumin powder,rasam powder and tamarind pulp.

Boil for 10-15 minutes and garnish with coriander leaves.
