Recipe | Chicken Shawarma Wrap

“Try this yummy and easy to made Chicken Shawarma Wrap”

RECIPE

INGREDIENTS

300 grams boneless chicken
2 tbsp olive oil

For the Marinade:

1 tsp paprika/ red chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
a pinch of ground cinnamon
a pinch of ground cardamom
Black pepper to taste
1 tsp garlic paste/ 1/2 tsp garlic powder
1 tbsp lemon juice
Salt to taste

For the Yoghurt Sauce:

1/2 cup yoghurt
1 tbsp tahini
Salt to taste
2 tbsp water (if using thick yoghurt)

For the Mayo Sauce:

1/2 cup mayonnaise
1/2 tsp red chilli powder
1 clove garlic crushed
(or use chili garlic mayo)

For Assembling:

Tortillas
Iceberg lettuce (optional)
Cabbage (optional)
Onions sliced
Pickled cucumbers, chillies
Chopped tomatoes
parsley
French fries (optional)

METHOD

To Prepare the Chicken:

1. Marinate the chicken breast with the above mentioned ingredients. Let it sit for 2 hours.

2. Heat olive oil in a pan and fry the chicken till cooked and charred on the outside.

3. Cut the chicken into smaller pieces. (you can also cut the raw chicken into strips and then fry it)

To make Yoghurt Sauce:

1. Mix all the ingredients together and keep aside.

To make the Mayo Sauce:

1. Mix all the ingredients together and keep aside.

Assembling the wraps:

1. Place the lettuce on the tortilla.

2. Then add chili mayo, chicken, pickled cucumber, tomatoes, french fries (all that you like to add).

3. Finally drizzle yoghurt sauce all over.

4. Close the wrap and toast with some butter till brown and crisp. If you have a panini press, then toast the tortilla rolls in it. It would be less messier.

If you are using pita bread:

1. After assembling, cover the roll in aluminum foil. Then place the roll with the aluminum foil in a frying pan. Cover it with a lid and cook on both the sides on low flame till nicely heated through.

2. You can also toast the pita bread in a pan, but that might make the pita a little dry. But if you get nice quality, soft bread, then it will be fine to do so. You can toast the rolls in a panini press too. That would be perfect.
